Scale is the number one killer of ice machines in this part of the state. Here is a maintenance schedule that keeps production up through summer.
If you run a restaurant, bar or convenience store in Oklahoma, your ice machine works harder than almost any other piece of equipment you own — and hard water is quietly destroying it.
What scale does
Mineral scale coats the evaporator plate and insulates it. Ice takes longer to form, harvest cycles stall, production falls by half, and eventually the machine freezes into a slab. Every one of those symptoms is reversible if you catch it before components fail.
A realistic schedule
- Every month: wipe down the exterior, check the bin door seal, inspect the ice for cloudiness
- Every three to six months: full descale and sanitize
- Every six months: condenser coil cleaning and water filter change
- Annually: professional inspection of the water inlet valve, pump, float and harvest components
High-volume kitchens should be on the quarterly end of every one of those ranges.
The economics
A scheduled descale costs a fraction of an emergency call during a Friday dinner rush, and far less than an evaporator or compressor replacement.
